OKRA (BHINDI) MASALA

Vegetable oil
2 large white onions, sliced
1 tsp garlic paste
1 tsp ginger paste
1 tsp tumeric powder
1 tsp cumin powder
1 tsp coriander powder
500g Okra (make sure it is dry) with tips and stems cut off to your desired length
1 green chilli, sliced
3 small tomatoes, roughly chopped
Half handful of fresh coriander for garnishing

directions

1. Sautée sliced onions in vegetable oil on medium to high heat until translucent, but also when they are starting to caramelise so the sweetness comes through. Half way through this add the ginger and garlic paste
2. Add tumeric powder
3. Add the okra and and green chilli slices to the onions and continue frying. Don't worry if the okra pieces start sticking to each other, that will go away
4. Add cumin and coriander powder, and keep stir frying for another 5 mins
5. Add tomato chunks and cook until they are warmed through and starting to disintegrate
6. Serve okra masala hot, garnished with fresh coriander
